1. Make the chocolate cake layers
Preheat oven to 350°F / 180°C.
Grease and line two 8-inch (20cm) cake pans.
Whisk dry ingredients together: flour, sugar, cocoa, baking powder, baking soda, salt.
Add milk, oil, eggs, vanilla and mix until smooth.
Slowly add hot coffee and whisk until combined (batter will be thin).
Divide into pans and bake 28–35 minutes, until a toothpick comes out clean.
Cool completely.
2. Make the chocolate cream
Beat all ingredients together until thick, fluffy and spreadable:
Heavy cream
Sugar
Cocoa
Vanilla
Refrigerate until using.
3. Build the cake
Place first cake layer on plate.
Spread a thick layer of chocolate cream.
Add second cake layer.
Cover top and sides with more chocolate cream.
4. Add the ganache glaze
Heat cream until steaming.
Pour over chocolate and stir until smooth.
Let cool slightly so it thickens.
Pour over the cake and let it drip. ![]()
